How to pumpkin spice your life

For most, it’s not fall until Starbucks rolls out the “Pumpkin Spice Latte.” From artsy, aesthetically pleasing photos on Instagram and “California cold” days of cozy studying, the P.S.L. is a mascot for fall. And for those whose sweet tooth craves that little extra bit of pumpkin spice in their life, the following recipes are a must bake.

Organic Chocolate Chip Pumpkin Bread; Recipe and boxed

Available exclusively at Target, this holiday edition baking mix is quick, easy, and incredibly delicious. With only three steps and three ingredients, Foodstirs’ pumpkin bread is perfect for those who love to bake on a whim–or those who love baked goods, but are typically awful at making them. Depending on the oven, the minimum time for baking is not enough time to bake, unless you want to eat the bread right out of the pan with a spoon; the slightly smushed texture does not detract from the pumpkin delight that it is. For those who are constantly on the go, put the batter in a muffin tin to make pumpkin muffins, which can be topped with a dollop of cream cheese for a bit of flair.

Iced Pumpkin Blondies; Recipe by Nestle (Click here for the recipe)

Incredibly easy to make and spectacularly tasting, these blondies are a must when it comes to fall cuisine. The recipe, being so simple, allows for some wiggle room in ingredient amounts, so for extra flavor feel free to do an extra dash of cinnamon in the batter or an extra splash of maple extract in the icing. There are some technical things in the recipe, but substitutions are easily made. When it asks to beat, don’t worry, you can use a fork–but be sure to mix well. And when it asks for maple extract, you can use maple syrup. Perfect for sharing at a party, or for keeping all to yourself, these blondies are amazing.

A fun challenge for the vegan in you, this coffee cake is perfect for a fall night in snuggled up and watching horror movies. If you are not vegan, don’t worry, just substitute the non-dairy ingredients for dairy ones. Although the recipe calls for several different spices, they can be easily substituted for pumpkin pie spice. Also, if you’re worried about finding maple extract for the glaze, the cake tastes just as scrumptious without it. For a stronger flavor, add en extra dash of cinnamon and brown sugar when making the batter.
